Paratha recipes have always been an integral part of north India cuisine and made with various stuffing or plain paratha. typically the most popular parathas are vegetable-based stuffed paratha, and tomato paratha is one such variety.
The concept of tomato paratha may or may not be common for many and maybe skeptical to even try it. This is a unique and flavored paratha recipe made with spiced tomato stuffed in wheat flour roti. It is very simple and easy to make and ideal for kids' lunch boxes with pickle, raita or any chutney as a side dish.

Ingredients
3 medium-sized tomatoes, finely chopped
1 medium-sized onion, finely chopped
2-3 cloves garlic,chopped
1-inch ginger,chopped
1 green chili, chopped
a pinch of asafoetida
1 teaspoon cumin seeds
salt to taste
1 teaspoon coriander powder
1 teaspoon, chili powder
1/2 teaspoon garam masala
1/3 teaspoon turmeric powder
2 tbsp fresh coriander, chopped
2 tbsp gram flour(besan)
2 1/2 cups wheat flour
2 tbsp oil
oil for roasting paratha
Instructions
1 - Heat oil in a vessel, add ginger, green chili, garlic, cumin seeds, and asafoetida.cook them all for 15-2- seconds.
2 - Add chopped onion and cook until golden brown.
3 - Next add in chopped tomatoes and cook until soft and mushy.
4 - Next add coriander powder, turmeric powder, salt, and garam masala.mix well and cook for 1 minute.
5 - Add gram flour and stir for a minute or to cook gram flour.
6 - Turn off the flame and add fresh coriander. Allow it to cool down completely before stuffing in paratha
7 - Add wheat flour and a little salt in a bowl and knead a soft and firm dough. keep aside for 10 minutes.
8 - After 10 minutes, knead it again for a minute and divide the dough into equal portions and make balls out of it.
9 - Take. a portion of dough and roll into circle and plate 2 tbsp of stuffing in the center.Take the edges and start pleating to center .secure tight.
10 - Sprinkle some wheat flour and roll slightly thick.
11 - On a hot Tawa, place the rolled paratha and cook both sides adding oil.
12 - Finally serve hot with raita or chutney or it can be eaten as it is.
Tip
1 - Add more gram flour(besan) if you find the stuffing is very wet and feel difficulty in rolling.
