Schezwan noodle recipe is quite similar to
Veg Hakka Noodle except the fact that it uses schezwan sauce in place of soy sauce. These noodles are cooked under a high flame to get that smokey flavor. if the veggies start to getting burnt , you can reduce the flame.
However, if you use heavy pan or wok with a heavy base then you might not be facing the issue of getting vegetables burnt. Also keep stirring continuously while frying, ensure the veggies are cooked evenly.
These Schezwan noodles can be served just like that without any accompaniment. A hot bowl of spicy noodle for the rainy season

Noodles 200 gm
1 cup cabbage, cut thin lengthwise
1 small capsicum, cut thin lengthwise
1 Onion chopped
3-4 garlic, diced
2 green chili, diced
1/2 tbsp ginger, chopped
1 small carrot juliennes
2 dried red chili
1/2 tbsp black pepper
1/2 tbsp vinegar
Salt to taste
1 tbsp red chili sauce
2 tbsp schezwan sauce(add less if you like less spicy)
4 tbsp sesame/olive/vegetable oil

Instructions
1 - Boil noodles as per the instructions written on the packet
2 - Drain noodles under running water, it will stop the cooking process
3 - Add 1/2 tbsp of vegetable oil in the noodles and toss well to coat oil into noodles, it will not let the noodles stick to each other.
4 - Heat oil in a pan, add ginger, garlic, green chili, dried red chili, saute for few seconds and add onion. stir for 1 minute then add all other chopped vegetables. stir for 1 minute on high flame then lower the heat.
5 - Next add vinegar, red chili sauce,schezwan sauce. Toss well to combine well with the sauce.
6 - Add salt and black pepper.
7 - add boiled noodles and mix well using a pair of tongs or forks, so that noodles get coated well with the sauce.
8 - Turn off the flame and transfer into serving plate/bowl and garnish with some more spring onion.
Tips
1 - I have used sesame oil in this recipe, you can use either vegetable, sesame, or olive oil.
