Stir Fried Vegaetable Pasta


This is one of my favorite pasta salads. I love this so much. This pasta salad is so versatile that you can add whatever veggies you like. I would highly recommend this to try once.

At least once


a week, I have started eating salad for dinner. and keep trying different recipes and found this one super tasty so sharing it with you all.

Ingredients 

Healthy pasta 200 gm

water for boiling

salt to taste

black pepper powder, a pinch

oil - 1 tbsp


For Stir-Frying

2 tbsp Olive oil

3 tbsp chopped garlic

1 tbsp chopped ginger

2 green chilies, chopped

1/3rd cup carrot

1/3rd cup mushroom

1/3rd cup Zucchini

2 cups pepper(Red, Yellow, and Green)

1/3rd cup broccoli

1/3rd cup corn kernels

salt & Black pepper to taste

1 tbsp oregano

1 tbsp chili flakes

1 tbsp soy sauce

2 tbsp onion greens

juice of one lemon

few cilantro(roughly chopped)


Instructions

Boil Pasta

1 - Set water for the boil, add salt and 1 tbsp oil. add pasta when water is roaring boil, cook for 7-8 minutes or until almost cooked.

2 - Strain the pasta immediately, drizzle .little oil, and season with a little salt and pepper powder. Toss well to coat the salt and pepper .this step is done to ensure the pasta doesn't stick to each other. Keep aside.


Stir Fry Pasta

1 - Set a wok on medium-high heat, add olive oil, ginger, garlic, and green chili, cook for a minute or so, don't let it burn.

2 - Further add carrot and mushroom and cook for 1-2 minutes on high flame.

3 - Further add zucchini, cook for 1-2 minutes, now add red, yellow, and green pepper, broccoli, and corn. kernels .cook them too for 1-2 minutes on high flame.

4 - Add salt and pepper powder to taste, oregano, chili flake, soy sauce, toss and cook for 1-2 minutes.

5 - Now add the cook boiled pasta, onion greens, lemon juice, and cilantro, toss well, you can also add 50 ml of reserved pasta water, toss and cook for 1-2 minutes.

6 - Healthy stir-fried pasta is ready, serve hot with some spring onion greens.
