This is one of my favorite pasta salads. I love this so much. This pasta salad is so versatile that you can add whatever veggies you like. I would highly recommend this to try once. At least once a week, I have started eating salad for dinner. and keep trying different recipes and found this one super tasty so sharing it with you all. Hope you will like it too !! Sabudana Paratha



Sabudana paratha is soft and crisp pancakes made with tapioca pearls(sabudana) , mashed potato buckwheat flour and mild spices.

Sabudana paratha is generally made for religious fasting . Usually, I make sabudana paratha,  Paneer Kheer  during fasting.

I make this sabudana paratha instead of making sabudana vada as I don't prefer any deep-fried stuff. sabudana paratha is a light meal and ideal for people who are fasting

The way to make the mixture is quite similar to sabudana vada . You can even make sabudana vada or sabudana paratha from the same mixture.

Serve sabudana paratha with chutney or raita. I have served with paneer curry made for fasting. Paneer curry made with paneer and tomato with cumin and ginger tempering.

Ingredients

1 cup soaked sabudana
1 boiled potato(mashed or grated)
1/2 cup buckwheat flour(kuttu ka atta)
1 green chili, finely chopped
1-inch ginger, grated
1/2 teaspoon black pepper powder
salt to taste
1 teaspoon cumin seeds


Instructions

1 - Grind soaked sabudana into a fine paste.

2 - Add all the other ingredients along with grind sabudana paste.

3 - Mix everything very well and form a dough-like sabudana vada.

4 - Spread a tbsp of oil on the pan .
5 - Apply some oil on your palms.

6 -Take some portion from the mixture and flatten with your palms.
7 -  You can also flatten on a ziplock plastic bag 

8 - Place the flatten round paratha on the pan.

9 - Roast until both sides are golden brown and crisp. Repeat for all parathas.

10 - If you have a large pan you can cook 2-3 paratha(small size) at a time.

11 - Serve this paratha with chutney or raita.



Tips

1 - Use rock salt instead of regular white salt if preparing for fast.

2 - Use ghee in place of oil if preparing for fast.

3 - You can skip the ingredient what you don't eat for a fasting day

4 -  Adding sabudana, potato and buckwheat flour are compulsory, rest ingredients are up to your choice.

5 - You can also add crushed or powdered peanut(roasted), and it can also be the replacement of buckwheat flour as well.
