This is one of my favorite pasta salads. I love this so much. This pasta salad is so versatile that you can add whatever veggies you like. I would highly recommend this to try once. At least once a week, I have started eating salad for dinner. and keep trying different recipes and found this one super tasty so sharing it with you all. Hope you will like it too !! Roti Pizza Muffin



A fun innovative and tasty twist to your otherwise leftover rotis. isn't it so cool that we can make pizza muffin out of a simple piece of roti .

The roti pizza muffins are very simple to make even though they look lovely and complicated .if you read the instruction step by step with pictures, you will see how pretty easy this is. Aren't such dishes so lovely which do not require rocket science 🧬 🧪 to make and still tastes awesome .such dishes are my favorite which requires spending less time in the kitchen yet get awesome results.

COOK TIME:20 MINUTES
TOTAL TIME: 25 MINUTES

Ingredients

3 Rotis
1 1/2 cups chopped veggies(onion,capsicum,tomato,corn)
1/3 cups mozzarella cheese
1/2 cups cheddar cheese
1/2 teaspoon black pepper powder
1 teaspoon chili flakes
1 tbsp mixed herbs
salt to taste
4 tbsp pizza sauce
1 tbsp wheat flour
1 tbsp melted garlic butter



Instructions

1 - Take a mixing bowl, add all the veggies along with salt, pepper powder, cheese, pizza sauce, chili flakes, mixed herbs. Mix everything well and keep aside.



2 - Cut all the rotis into halves then cut them into triangles.



3 - Mix wheat flour with 1/2 tbsp water to make semi thick slurry.

4 - Grease your cupcake tin wholes wit oil.

5 - Take a  roti triangle, put into cupcake whole.



6 - Apply little slurry on the center and put another  roti triangle over it and press to let them stick




7 - Add 2 tbsp stuffing in each cup. 


8 -  Sprinkle some cheddar and mozzarella cheese  in each cup



9 - Brush little garlic butter on the edges of rotis.

10 - Place the cupcake tin in preheated oven for 15-20 minutes on 180 degrees Celcius or until you see brown spots on edges.

11 - Remove and serve hot with some herbs on top.

Tips

1 - If you do not have garlic butter, add two crushed or grated garlic into 2-3 tbsp of regular butter and your freshly made garlic butter is ready.

2 - Whatever vegetables you like for pizza, you can use. I have used what I had available then.

3 - You can use some extra rotis for lunch and save then to prepare this dish for an evening snack. you don't need to prepare fresh roti for this.go with the leftover rotis.

4 - If you do not have cheddar or mozzarella cheese, you can use whatever cheese available to you.do not use cheese slice.you can also use cheese cubes, you need to chop the cube into very small pieces.
