Chili Idli

Ingredients
For Idli
2 cups semolina(sooji)
1 cup curd
water as required
salt as per taste
1 tbsp ghee
For stuffing
1/2 cup finely chopped onion
1/2 cup finely chopped capsicum
1 cup paneer(cut into very small cubes)
1/2 tbsp garlic(minced)
1 green chili, finely chopped
1 tbsp soy sauce
1 1/2 tbsp red chili sauce
1 teaspoon black pepper powder
salt to taste
1 1/2 tbsp oil
Instructions
Prepare Stuffing
1 - Heat oil in a pan, add garlic green chili and saute for few seconds.
2 - Next add onion and capsicum and saute for 1 minute or so.
3 Next add soy sauce, red chili sauce, pepper powder, and salt .mix everything well.
4 - Add paneer cubes and mix well .cook for a minute and turn off the flame.set this aside and let it cool.
Prepare Idlis
1 - Add ghee in a pan and roast semolina for 2-3 minutes on medium flame.don't let it turn brown in color.set aside and let it cool down.
2 - Add roasted semolina and curd, mix well and little water and let it rest for 20 minutes.
3 - After 20 minutes, add more water to adjust consistency, the batter should not be very thick nor very thin.
4 - Add fruit salt, mix well.
5 - pour 1 tbsp batter into idli mould and then put 1 spoon stuffing over it, next pour 1 tbsp batter again over it and cover the stuffing completely.
6 - Fill the mould like this and steam for 10-12 minutes
7 - Serve hot like that or with choice of chutney.
Tips
1 - You can use either sour or fresh curd to make idlis.
2 - Try making the stuffing bit spicy as paneer has a rich taste in itself. making it spicy goes well with idli.
