Idli while being a popular breakfast choice for many of us, leaves us facing a dilemma of a different kind. The biggest question is what do we do with leftover idlis. while soft and hot idlis are relished by everyone, nobody seems to be much interested in leftover idlis. This presents an opportunity to innovate dishes like paneer stuffed idlis, chili idli.
The best part of this dish or for that matter of Indo Chinese dish is, it requires very little cooking time chili idli would require some 15 minutes of your time in front of the gas stove if the idlis are prepared in advance of course.

Paneer Stuffed Idli
Idli Variety(Tomato and vegetable rava idli)

Ingredients
For Idli
2 cups semolina(sooji)
1 cup curd
water as required
salt as per taste
1 tbsp ghee
For Frying Idli
1/2 cup plain flour(maida)
1/2 cup cornflour
1 teaspoon black pepper
1 teaspoon salt
oil for frying
For Tadka
1/2 cup diced onion
1/2 cup diced capsicum
1 tbsp garlic(minced)
1 green chili(minced)
1/2 inch ginger(minced)
2 tbsp red chili sauce
1 tbsp dark soy sauce
1/2 tbsp vinegar
1/2 tbsp black pepper
salt to taste
1 tbsp cornflour
Instructions
Preparing Idli
1 - Add ghee in a pan and roast semolina for 2-3 minutes on medium flame.don't let it turn brown in color.set aside and let it cool down.
2 - Add roasted semolina and curd , mix well and little water and let it rest for 20 minutes.
3 - After 20 minutes, add more water to adjust consistency, the batter should not be very thick nor very thin.
4 - Add fruit salt, mix well, and pour batter into greased mould and steam for 10-12 minutes.
Frying Idli
1 - Cut all the idlis as shown in the below image.
2 - Add plain flour, cornflour, salt, black pepper and water in a mixing bowl to make pouring consistency batter
3 -Add sliced idli into the batter , coat well into the batter and drop into hot oil and fry it until you start getting golden brown color on idlis. Keep the flame medium.
4 - Deep fry all the idlis and set aside.
Prepare Tadka
1 - Add oil, garlic, green chili, and ginger, saute for few seconds on high flame then add diced onion and capsicum.cook for a minute on high flame.
2 - Next add soy sauce, vinegar, red chili sauce black pepper salt(Be careful while adding salt as you have already added salt while steaming and frying idlis).mix everything well. Add 1/2 cup water and let it simmer for a minute.
3 - Next add cornflour and 2 tbsp water in a small bowl and mix well , add this into tadka.let it simmer until you get semi thick gravy.
4 - Add fried idlis and mix well so that sauce gets coated well in all idlis.
5 - Server hot.
Tips
1 - You can also prepare this dish with rice idli as well. if you have leftover idlis , go for this next level of idli variety.
2 - Don't make the tadka sauce very thick or very thin else you might end up not seeing the even coating on idlis
3 - You can use either sour or fresh curd to make idlis.
