VEGETABLE RAVA IDLI
An interesting and unique way of preparing the instant idli recipe with rava and veggies. traditionally idli’s are made with the combination of rice and urad dal batter which eventually yields white colored dumplings. but it can also be made with semolina batter to which finely chopped veggies are added and steamed with the same procedure.

Ingredients
3 cups semolina
1 tbsp ghee
2 tbsp oil
1 teaspoon urad dal
1 teaspoon chana dal
1 teaspoon mustard seeds
2 finely chopped green. chilli
1 pinch asafoetida
5-6 curry leaves
1/2 cup finely chopped capsicum
1/2 finely chopped carrot
1/2 finely chopped onion
1/2 cup corn(optional)
salt to taste
1.5 cups curd
1 tbsp fruit salt
Instruction
1-First add ghee in a pan, roast rava for 2-3 minutes and set aside to cool completely.
2-heat oil in a pan, add urad dal, chana dal, mustard seeds, green chili. let it all splutter then add asafoetida and curry leaves.
3-next add all the chopped veggies and cook until they are tender.
4-add salt and turn off the flame.set aside to cool completely.
5-add roasted semolina and curd in a mixing bowl, mix well .also add little water and soak it for 15-20 minutes.
6-next add sauteed veggies, salt after 20 minutes, and mix well. add water to adjust consistency for idli batter.
7-grease the idli mould with oil
8-add fruit salt in the batter and mix well till it gets frothy, transfer it into mould .dont let the batter rest after adding fruit salt.
9-steam the idli for 15 minutes on medium flame
10-serve with coconut chutney.
Note.
keep the rava roasted in advance and store it to make instant rava idli.
TOMATO RAVA IDLI
I am an idli lover and tomato idli is one of the tastiest idlis I have ever made. A delicious twist to regular plain idlis.
Tomato Rawa Idli’ is a delicious and healthy variation to the regular plain idlis. These idlis have a tongue-tickling flavor due to the sourness of fresh juicy tomatoes and taste absolutely fantastic with peanut coriander chutney.
I would say I just love this idli and so my husband does.

Ingredients
3 finely chopped tomatoes
1 teaspoon urad dal
1 teaspoon chana dal
1 teaspoon mustard seeds
4 tbsp ghee
10-12 curry leaves
2 green chili, minced
1 teaspoon turmeric powder
1 teaspoon red chili powder
salt to taste
2 tbsp freshly chopped coriander leaves
2 cups Rava
1 cup curd
1 tbsp fruit salt or Eno
Instruction
1-add 1 tbsp ghee in a pan, roast rava for 2-3 minutes.don't let it brown.set aside
2-add 3 tbsp ghee in another pan or in the same pan, add chana dal, urad dal, and mustard seeds, saute for 1 minute, don't burn it. next, add green chili and saute for few more seconds.
3-add chopped tomatoes, stir well, and cover it.
4-cook tomatoes until soft and mushy.
5-open the lid and add salt, chili powder, turmeric powder and stir well.
6-mash the tomatoes completely, add coriander leaves and turn off the flame.set aside to let it cool completely.
7-by the time tomatoes are getting cool completely, soak semolina.
8-add roasted semolina, curd in a mixing bowl and add little water .mix well, cover it, and keep it to rest for 15-20 minutes.
9-after 20 minutes, add salt(be careful while adding salt is already in tomato mixture) , tomatoes mixture, and mix well. gradually add water to bring it into idli like consistency.
10-add fruit salt and mix it .do not stir much.
11-grease idli mould and fill it with idli batter and cook it.
12-Enjoy this delicious tomato idli with coconut or peanut chutney or you can also eat it like that.
