Stir Fried Vegaetable Pasta

A quick, delicious vegetarian appetizer that can be made under 30 minutes. Indo Chinese chili and Manchurian dishes are favorite to everyone at home. This soya chunks Manchurian is very quick to make since there is not much chopping and preparation work like we do for another Manchurian recipe.
This can be served as an evening snack or in a meal along with noodles or fried rice .it is best served immediately after adding the fried chunks to the sauce.
Soya chunks turn out to be very crispy once they are fried and remain the same for about an hour. They begin to turn soggy after 5-7 minutes of adding them to the sauce .so make sure, you add the fried chunks only before serving it.

2 cups soya chunks
salt to taste
1 tbsp ginger garlic paste
1 tbsp chili powder
a pinch of black pepper powder
1 tbsp curd
1/2 tbsp cornflour or plain flour
oil for shallow frying
2 tbsp garlic
1 tbsp ginger
1-2 green chilies, chopped
1/4 cup spring onion
1/2 cup capsicum , diced
1 tbsp soy sauce
2 tbsp red chili sauce
1/2 tbsp black pepper powder
corn starch 1 tbsp + 4 tbsp water
1 tbsp vinegar
1 - Set water for boiling, add soya chunks and boil for 3-4 minutes. strain the excess water, rinse with fresh water, and squeeze the excess water from soya chunks.
2 - Transfer the soya chunks to a mixing bowl, add salt, ginger garlic paste, chili powder, black pepper powder corn flour, and curd, coat each soya chunks well.
3 - Add 2 tbsp oil in a pan on medium heat, shallow fry the marinated soya chunks until crisp. remove it on an absorbent paper and keep aside for later use.
4 - Set oil in a wok or vessel, keep the flame high. add garlic ginger and green chili, saute on high heat for a minute, add spring onion and saute for 30 seconds.
5 - Add capsicum and saute for a minute keeping the flame high.
6 - Add soya sauce, red chili sauce, tomato ketchup salt, and pepper, saute on high flame for a minute.
7 - In a separate bowl mix cornflour and water, add this slurry and cook until sauce thickens, add the fried soya chunks and cook for 2-3 minutes, add vinegar and mix.
8 - Soya chili is ready to be served, serve hot.
1 - You can use white onions if you do not have green onions.
2 - Do add red and yellow bell pepper if you have it give a nice color. I had only green one available so added that only,
3 - I have shallow fried the soya chunks to keep it healthier and avoid having more oil. You can definitely deep fry the marinated soya chunks if you want,
