Hakka noodles are great on their own or you can also serve it with chili paneer or manchurian for a perfect indo chinese dinner. Hakka noodles are not only popular with kids but also with grownups. Hakka noodle is quite similar to veg noodles .however in India it is more popularly known as veg hakka noodles.
There is subtle difference between normal noodle recipe and veg hakka noodle recipe. The main difference is the use of noodles ,hakka noodles are prepared using the thin rice noodles whereas normal veg noodles can be prepared with any noodle and secondly hakka noodle is a bit spicier compare to normal veg noodles
The best thing is you can add vegetables of your choice there is no hard and fast rule like add only these veggies. In this recipe, I have used capsicum, carrot, mushroom, cabbage, and onions.
Ingredients
Noodles 200 gm
1 cup cabbage, cut thin lengthwise
1 small capsicum, cut thin lengthwise
1 Onion chopped
3-4 garlic, diced
2 green chili, diced
1/2 tbsp ginger, chopped
1 small carrot juliennes
1 tbsp dark soy sauce
1/2 tbsp black pepper
1/2 tbsp vinegar
Salt to taste
1 tbsp green chili sauce
4 tbsp sesame/olive/vegetable oil

Instructions
1 - Boil noodles as per the instructions written on the packet
2 - Drain noodles under running water, it will stop the cooking process
3 - Add 1/2 tbsp of vegetable oil in the noodles and toss well to coat oil into noodles , it will not let the noodles stick to each other.
4 - Heat oil in a pan, add ginger, garlic, green chili , saute for few seconds and add onion. stir for 1 minute then add all other chopped vegetables. stir for 1 minute on high flame then lower the heat.
5 - Next add soy sauce, vinegar,red-green chili sauce. Toss well to combine well with the sauce.
6 - Add salt and black pepper.
7 - Add boiled noodles and mix well using a pair of tongs or forks, so that noodles get coated well with the sauce.
8 - Turn off the flame and transfer into serving plate/bowl and garnish with some more spring onion.
1 - I have used sesame oil in this recipe, you can use either vegetable, sesame, or olive oil, whichever is available to you.
2 - Do not overcook the noodles else it will result into soggy noodles.
