Stir Fried Vegaetable Pasta

Savory dumplings are always good to party starters or snacks but tandoori based momos make it more flavourful. These momos are generally soaked and marinated into the tandoori sauce later chargrilled over the gas flame or on a grilling pan.
The Nepali cuisine momos are served with tomato-based chutney as a side dish .but in this recipe momos are dipped in a yogurt-based tandoori marinade which is later grilled on a pan or over gas flame you can even grill it in the oven as well. I have share a quite few momo Recipe including Kothey Momo and Devil Momo but I have developed a special interest in trying out this TANDOORI MOMO RECIPE . as matter of fact, I wasn't aware of such fusion recipe and was happy with the traditional classic steamed momo recipe. my first encounter with this recipe was getting an option for tandoori momo in a restaurant. I personally liked it.
The recipe doesn't have much complicated steps yet some tips, recommendations, and serving ideas for the tandoori momo recipe. In this recipe I have used vegetable and paneer based filing but this can easily be extended to any meat or combination of paneer and meat as per your preference .secomndly I have used all-purpose flour or maida to prepare the momo wrapper .alternatively you can also use whole wheat flour to make it healthier and less gluten. Finally, you can serve this as it without any condiments .but it tastes great when served with green chutney, momo chutney, or dahi chutney . This makes it a great fusion recipe and can be served without any side dish.
Refined flour(maida) - 2 cups
salt to taste
water as required
cabbage 1 cup(grated)
onions ,1/2 cups(chopped)
salt to taste
capsicum 1/2 cups(finely chopped)
1/2 cup grated paneer
a pinch of black pepper powder
1 tbsp red chili powder
1 tbsp mango powder
1 tbsp chopped green chili
1 tbsp ginger garlic paste
1 tbsp fresh coriander leaves(chopped)
2 tbsp spring onion greens
oil for frying
Mustard oil - 1 tbsp
1 tbsp red chili powder
1 tbsp coriander powder
1 tbsp garam masala
1 tbsp cumin powder
1 tbsp Kasuri methi
1 tbsp mango powder
1/2 tbsp turmeric powder
1/2 tbsp black salt
2 tbsp ginger garlic paste
1/2 cup hung curd
1 tbsp roasted besan(gram flour)
salt to taste
1 tbsp fresh coriander
1 - In a mixing bowl, add refined flour, salt, and water as required to knead a semi-stiff dough.
2 - Cover it with a damp cloth and rest it for 15-20 minutes.
3 - Knead once again and divide it into equal roundels.
4 - In a muslin cloth add cabbage, onion, and salt, squeeze well to remove excess moisture.
5 - In a mixing bowl add, the squeezed veggies, capsicum, paneer, salt, black pepper, chili powder, mango powder, green chili,ginger-garlic paste, coriander leaves .mix well and add spring onion greens.
6 - Flatten the dough balls and roll into a 3-inch circle.
7 - Place a spoonful of stuffing on the center on the.
8 - Shape the momos by pinching it from one side to continue in a circular motion or whatever shape you want to give.
9 - Deep fry the momos on medium flame until the outer layer is light brown.
1 - In a mixing bowl add all the ingredients and mix well, add fried momos , mix with a light hand, and coat well with the marinade .keep it for 20-25 minutes covered.
2 - Skew The Momos in the skewer.
3 - Heat oil in a pan and cook the momos on each side until golden brown.you can also chargrill on the direct flame to get the charred texture
4 - Top it with few onion rings , melted butter , chaat masala, and fresh cream
5 - Serve hot with green chutney or any chutney of your preference.
1 - You can skip a few spices if you do not have for marination.
2 - Always squeeze extra water from cabbage before making stuffing as it has lot of moisture
3 - To avoid extra effort , you can first grill it on a pan then roast over the direct flame or you can also directly grill over the gas flame if you want charred texture.
4 - Alway use fresh curd for marination. I would suggest to add roasted besan and not to skip it, it enhances the taste really well.
5 - You can also skew some onion and capsicum with momo while grilling it
