Ingredients

1 small pack noodles(any noodle you can take)
7-8 finely chopped garlic
4-5 finely chopped green chili
1 chopped onion
1/2  chopped capsicum
1 small finely chopped carrot
1 tbsp soy sauce
1 tbsp vinegar
2 tbsp red chili sauce
salt to taste
1/2 tbsp Chinese salt
1 tbsp black pepper powder
4 tbsp oil

Instructions

1 -Boil noodles as per the instruction written on the pack. drain the extra water into a colander and run it under cold water to avoid overcooking. Rub some oil on your palm and then roughly coat the noodles by your hands.

2 - Heat oil in a wok or pan.

3 - Add garlic and green chili, cook for a minute, don't let the garlic turn into brown.

4 -Add onion saute for 1 minute, next add capsicum and carrot.

5 - Saute all the vegetables for 1 and a half minutes or so.

6 - Next add soy sauce, vinegar, red chili sauce, white salt, and Chinese salt and black pepper powder.

7 - Mix everything well and give a good stir.

8 -Add boiled noodles. and mix it using 2 forks to get it mixed well.mix it for 2-3 minutes to absorb all the flavors into noodles.

9 - Turn off the flame and transfer into a serving plate and serve hot.

Tips

1 - Use sesame oil/peanut oil for the closest authentic taste – if you do not have this oil, feel free to make it in canola/ veg oil. If sesame oil is too strong for your palate then use 50:50 sesame: veg oil.
2 -Veggies -Try cutting veggies in similar sizes for even cooking. And yes order of veggies to be cooked matters.
3 - Grate/ minced ginger-garlic before you actually start the frying process.
4 - Keep salt, pepper, and other desired spices and herbs handy.
5 - In short no multitasking when it comes to actual frying.
6 - Gather all ingredients in one place.
Frequently Faced Problems
Overcooked veggies killed the beauty – feels like baby food !!
