Stir Fried Vegaetable Pasta

The Kaju Masala is rich creamy and a little sweeter side. it is also mild and not much spicy.so good for kids. Whole cashews are added to the recipe.
This Kaju curry being rich makes for a good party dish or for a weekend meal. You can serve Kaju curry with tandoori roti, naan chapatis. You can a, so serve it with jeera rice or pulao.

1 tbsp ghee
1/2 cup cashew
3-4 dry red chili
2 medium-sized onion(diced)
3 medium-size tomato(diced)
4-5 cloves of garlic
1-inch ginger
100 ml of water
1 tbsp ghee
1 green cardamom
1-inch cinnamon stick
1 tbsp cumin seeds
1 cup cashew
1 tbsp red chili powder
1 tbsp coriander powder
1 tbsp fennel powder
cashew onion paste
salt to taste
200 ml hot water
1 tbsp Kasuri methi
1 tbsp garam masala
1 tbsp fresh cream
1 - Heat ghee in a vessel on medium heat, add cashew nuts and fry until golden brown.
2 - Add onions, dry red chili, tomatoes, garlic, ginger, cook until tomatoes and onions are mushy.
2 - Cooldown. to room temperature and grind into a fine paste. Add water to adjust the consistency.
1 - Heat a vessel on medium heat, add ghee and whole spices, saute for few seconds.
2 - Add cashew and saute until golden brown. Add red chili powder, coriander powder, fennel powder and saute for a minute.
3 - Add onion tomato paste, salt and cook for 7-8 minutes or until the gravy leaves ghee.
4 - Add hot water to adjust the consistency and bring to a boil.
5 - Add Kasuri methi,garam masala, and fresh cream garnish it with some freshly chopped coriander leaves and mix well.
6 - Kaju korma is ready and serve hot with paratha or roti of your choice.
