Stir Fried Vegaetable Pasta

This is one of my favorite pasta salads. I love this so much. This pasta salad is so versatile that you can add whatever veggies you like. I would highly recommend this to try once. At least once a week, I have started eating salad for dinner. and keep trying different recipes and found this one super tasty so sharing it with you all. Hope you will like it too !! Jackfruit Biriyani



Tendergreen raw jackfruit is marinated with spices and cooked with rice for a scrumptious version of jackfruit biriyani. Jackfruit has the texture of meat and really goes well as a substitute for meat that vegetarians can use.

Did You Know:  Raw jackfruit can help reverse the diabetic condition .clinical research has found that raw jackfruit has a much lower glycemic load than rice and wheat.



in addition  , jackfruit is rich in flavonoids, antioxidants, and vitamin C, which makes it an excellent treatment for boosting the body's immune system. the high level of potassium in jackfruit helps in lower blood pressure, aiding in the prevention of strokes and heart disease.

Ingredients

For Marination

200 gms Jackfruit, raw(chopped into small pieces)

2 tbsp ginger garlic paste

1 tbsp red chili powder

1/2 tbsp turmeric powder

1 tbsp garam masala

2 tbsp lemon juice

salt to taste


For Gravy

2 green cardamom

1 black cardamom

1 bay leaf

2-3 cloves

1-inch cinnamon

3-4 whole black pepper

1-star anise

90 gms curd

1 cup onion(sliced)

2 green chili.slit

salt to taste

3-4 tbsp ghee

1 tbsp coriander powder

1/2 tbsp garam masala

1/2 tbsp store brought biriyani masala(optional)

1/2 tbsp red chili powder

1 teaspoon turmeric powder


For Rice

2 cups basmati rice

1/2 lemon wedge

1/2 tbsp ghee

1/2 tbsp salt


For Assembling

Cooked Rice

Gravy

fresh mint leaves(chopped)

fresh coriander(chopped)

1 tbsp ghee

1/3 cup fried onion


Instructions

Cook Rice

1 - Boil water in a large saucepan, add soaked and drained basmati rice along with salt and lemon wedge.

2 - Cook the rice until it's 70% done. Strain extra water and keep it aside for later use.


Prepare. Marinade

1 - Put all the ingredients of the marinade in a mixing bowl, make sure jackfruit is coated well with the masala. cover it, and keep it for 30 minutes.

2 -  Heat up a pan, add 2-3 tbsp oil, add marinade jackfruit, and shallow fry them both sides until 70% cooked. transfer into a plate and keep for later use.


Prepare Gravy

1 - Add ghee in a vessel, add all the whole spices and onion.cook onion until nicely golden brown color achieved.

2 - Lower the flame, add salt, turmeric powder, coriander powder, biriyani masala(if using),garam masala, mix and saute for few seconds.

3 - Add little water to stop the cooking process of onion. Add whisk curd and keep stirring continuously till it comes to a boil.

4 - Add shallow fried jackfruit, mix, and cook for 2 minutes on medium flame. add little water if it is very dry.

5 - Turn off the gas, gravy is ready for layering the biriyani.


Assemble Biriyani

1 - Spread ghee on the base of the casserole or use a heavy bottom utensil.

2 - Spread a layer of jackfruit gravy, sprinkle some fresh chopped mint and coriander leaves, fried onion, and spread a layer of rice. repeat the layering.

3 - Spread the top layer with rice, add fresh coriander and mint leaves followed by fried onions, ghee and sprinkle some biriyani masala.

4 - apply dough on the rim of the casserole to seal and finally place the lid.

5 - Put the casserole over the Tawa and cook or give a dum for 15-20 minutes on low flame.

7 - Jackfruit biriyani is ready, serve with chilled raita.
