Stir Fried Vegaetable Pasta

This immensely popular and super delicious classic Indian sweet is pretty much served at every feast in India. Be it a wedding, party or any other celebration. this is always seen on the menu and never fails to impress people.
Carrot halwa is the delicacy of winter as this halwa is specially made during winter when grocery stores are full of red carrots. Making carrot halwa during winter is a tradition in Northern India. In North India, it is made with red carrot , while in many other parts of India it is made with Orange(regular) carrot.
Here in Sydney, we do get the red carrot in a few Indian stores, an whenever I find them, never miss to take them with me as they are much flavourful than regular one especially for halwa.

2 tbsp desi ghee
2 cups grated carrot
1 cup milk
sugar as required
1 teaspoon cardamom powder
1/2 cup khoya
3-4 tbsp chopped nuts(cashew, almond, and pistachio)
1 - Add ghee in a pan, add grated carrot and cook it while stirring continuously for 5-7 minutes.
2 - Add milk and cook until it absorbs all the milk. stir occasionally to avoid sticking on the bottom.
3 - Add khoya and, mix and cook for 8-10 minutes on low to medium heat.
4 - Now add sugar and cook until halwa starts drying. Do not dry more.
5 - Turn off the flame and add cardamom powder, mix, and let cool down for 5-7 minutes.
6 - Add chopped nuts, mix and halwa is ready.
