This is one of my favorite pasta salads. I love this so much. This pasta salad is so versatile that you can add whatever veggies you like. I would highly recommend this to try once. At least once a week, I have started eating salad for dinner. and keep trying different recipes and found this one super tasty so sharing it with you all. Hope you will like it too !! Eggless Carrot Cake



This eggless carrot cake is incredibly moist and tender! It is filled with carrot goodness and has a delicious cinnamon taste, and as if that were not enough, it is topped with luscious cream cheese glaze! It comes together easily and is wonderful for breakfast, afternoon snack, or dessert.

This eggless carrot cake is definitely a favorite spring dessert!

Instructions

1 1/2 cups plain flour(maida)

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon salt

1/4 cup + 2 tbsp oil

1 cup powdered sugar

1/2 cup milk

1 tbsp vanilla extract

1 cup carrot, grated.


For Cream Cheese Frosting

150 Gm Cream cheese

1/2 cup powdered sugar

1/2 tbsp vanilla extract


Instructions

1 - Preheat the oven to 180  degrees Celcius/Grease the 8 inch round cake pan.

2 - Take dry ingredients(plain flour, baking soda, baking powder, salt, cinnamon powder)and sift in a bowl. Whisk well till everything is incorporated well.

3 - In another bowl, take oil and sugar, whisk using wire whisk for few minutes. You will have a grainy mixture.

4 - Now add milk and vanilla extract and whisk really well.

5 - Now add half of the flour mixture, mix gently using a spatula. Then add the remaining flour mixture. start mixing with a whisk and halfway through the switch to a spatula and mix till everything comes together.do scarp the sides and bottom of the bowl while mixing. Do not overmix.

6 - Now fold grated carrot in the batter with a spatula.

7 - Pour the batter into a greased cake pan. Spread the cake batter evenly using a spatula.

8 - Bake in the preheated oven for 35-40 minutes. Check the cake by inserting a toothpick in the center. if it comes out clean then the cake is ready.

9 - Remove it from the oven and let it cool on a cooling rack for 15 minutes. Then remove it from the pan by inverting on the rack. Let it cool down completely.





Cream Cheese Frosting.

1 - While it's cooling, make cream cheese frosting. Take cream cheese in a bowl. whisk till smooth(Use wire whisk, do by hand or use a hand mixer or stand mixer with a whisk attachment.)

2 - Now sift the powdered sugar in it, beat it again till smooth, fluffy and shiny. You will feel its spreading consistency. It may take about 3-4 minutes.

3 - Now add vanilla extract and beat again till mixed. The frosting is ready.

4 - Make sure that the cake is cooled completely before you start frosting. add dollop in the center of the cake spread evenly using a spatula or butter knife. and it's done.



Note

1 - You can use red or orange carrots, whatever is available to you.

2 - I have used brown sugar for this recipe, you are free to use any sugar.
