Spot Idli

One of the most popular street food in Hyderabad. Originally this is done with rice and Urad dal batter but I like to make it quicker and in an instant way using rava. It is spicy and just amazing

The reason this is called spot idli is that you add the batter on the spot.

So for this recipe, basically we prepare masala using onion tomato, and Karam podi powder and then pour the batter over it.

KEYWORD: spot idli

Ingredients

1 cup Semolina/Sooji/Rava

1/2 cup curd or yogurt

1 cup water(This may vary slightly)

salt to taste

1/2 tbsp eno for each batch

1 medium-sized onion, finely chopped

3-4 cloves of garlic, chopped

1/2 tbsp ginger, finely chopped

2 small green chilies, finely chopped

1 tomato, finely chopped

2 tbsp chopped coriander

1 tbsp Eno salt

2 tbsp Karam podi(If you don't have podi masala, just use a mix of coriander, turmeric, and chili powder)

2 tbsp butter for each batch

Instruction

1 - Add Rava and curd in a bowl, mix it well, and add water in stages to make a smooth batter.do not add water in one go. Cover this and rest the batter for about 30 minutes

2 - Add salt after 30 minutes and keep it aside.

3 - For Instant spot idli, you need to do it in patches, so divide the batter into two parts and keep half of the batter in a separate bowl.

4 - In a pan add some butter, add half of the onion, garlic, green chili, and ginger..cook it a little bit until it turns fragrant and the onion turns pink.

5 - Next add a partial quantity of tomatoes to this.

6 - Next add in 1 tbsp Karam podi.cover this and cook it for about for a minute or two.

7 - Add some coriander powder to this, and season with salt.

8 - Divide the masala into parts.

9 - Go back to the batter and add some eno or fruit salt in half of the batter and whisk it really well, the moment you whisk it will become fluffy.

10 - Add 2 spoons of batter on one spot and cover this and cook it about for 7-8 minutes on low flame.

11 - After 7-8 minutes, check if it has been cooked properly and flip it and cook it on the other side for 2-3 minutes and its ready .give it a good mix.

12. - This tastes best as it is or you can also serve with some coconut chutney.

Tips

1 -You can use ghee or oil in place of butter. I personally like the taste of butter in this recipe.

2 I have used the fine semolina, you can definitely use the coarse as well.
