Stir Fried Vegaetable Pasta

Mexican pani puri, a fusion twist to an Indian classic. It perfect for summers.
Mexican style recipe is an Indian Mexican fusion twist on famous Indian classic street food pani puri . This is indeed a great party appetizer.
This is the most popular Indian street food and loved by everyone whether kids or adults.
Today I am sharing Indo-Mexican fusion snack with avocado stuffed inside crispy puris. This avocado Pani puri is very simple to assemble and one can find puffed puri in any Indian grocery store.

1 ripe avocado(mashed)
2 tbsp onion, chopped
2 tbsp tomato, chopped
1 tbsp lemon juice
1/2 tbsp olive oil
Salt to taste
1/2 cup tamarind pulp
1 cup jaggery
1 teaspoon chili powder
1/2 tbsp roasted cumin powder
Add little sugar if needed
For Jaljeera Water
Instructions
Make Guacamole
1 - Mix all the ingredients well and keep aside.
2 cups mint leaves
1/4 cup fresh coriander leaves
2-3 green chilies
1-inch ginger
1 tbsp lemon juice
water as required
1 tbsp cumin powder
1/2 tbsp black salt
white salt as required
20 Puris(gol gappe)
1 - Add 4 tbsp water and jaggery in pan.let the jaggery melt in then add tamarind pulp.
2 - Let this come to boil add cumin powder, chili powder, and simmer for 3-4 minutes on low heat.
3 - Check if it is sweet enough or else add some sugar if required.
4 - Tamarind chutney is ready , let it cool down completely before using.
1 - Add in mint leaves, coriander leaves, ginger, green chili, and water into a mixer grinder and grind into a fine paste.
2 - Transfer this paste into a bowl.
3 - Add cumin powder, black salt, white salt, and cold water as needed. Mix everything well and set aside for later use.
1 - Take a puri , fill in some guacamole, and top with some tamarind chutney.
2 - Dip the puris into jaljeera water to fill it and enjoy it.
Note: Black avacado are the rule one and green ones are raw... If you get the raw then keep it for 4-5 day's and it will turn into black
