This is one of my favorite pasta salads. I love this so much. This pasta salad is so versatile that you can add whatever veggies you like. I would highly recommend this to try once. At least once a week, I have started eating salad for dinner. and keep trying different recipes and found this one super tasty so sharing it with you all. Hope you will like it too !! Vegetarian Burrito





Quick and easy, bean and rice burrito are the perfect vegetarian dinner idea for your weekend. The basic recipe includes plenty of Mexican seasoning,is a great way to use up leftover rice as well. and can be customized to whatever you have in hand.

The secret to this delicious burrito is lime rice .many restaurants rely on it for vegetarian burritos as well and it's as simple as mixing the ingredients in the right proportion.

These burritos are so filling that they are almost a complete and balanced meal on their own. if you would like a side dish, slice up an avocado and serve it on the top of any fillings that didn't fit in the tortilla.

The best thing I like about this recipe is that the same set of things can be used in two forms of recipes.use it as a burrito bowl, keeping all the elements in a bowl and serve with some nachos, and then, on the other hand, it can be wrapped in tortilla .so Try whichever version you like, and do let me know your feedback on this in the comment section.

Ingredients

For Rajma Beans


1 tbsp oil
1 garlic finely chopped
1/2  cup kidney beans(red or black)
3 tbsp chopped onion
2  tbsp chopped tomato
1/2 tbsp Mexican seasoning
salt as required
1 garlic finely chopped


For Rice

1 1/2  cup cooked rice
2 tbsp oil
1/2 tbsp chopped garlic
1 green chili, chopped
1 small onion, chopped
3 tbsp boiled corn
1 tbsp Mexican seasoning
juice of 1 lemon
salt as required
1 teaspoon black pepper
1 tbs chopped coriander leaves

For Salsa

1 cup chopped tomatoes
1/3 cup chopped onion
1/2 tbsp chopped coriander leaves
salt as required
1 green chili , chopped
1/4 cup boiled corn
juice of a half lemon

For Guacamole

1 Ripe avocado
juice of a lemon
1/4 cup chopped tomatoes
2 tbsp chopped onion
1 tbsp olive oil
salt as required


4 -6 Tortilla Wraps

Instructions

Prepare Beans


1 - Boil the kidney beans for 2 whistles.

2 - Drain the extra water and keep it aside.

3 - Heat oil in a pan.add garlic once oil is hot.saute for few seconds on low medium flame.

4 - Add onion and cook until translucent , add tomatoes, and cook for 1 minute on high flame.

5 - Add boiled kidney beans and mix well.

6 - Add salt, Mexican seasoning and mix well .mash some of the beans with the help of the back of the spoon.cook for 1-2 minutes and then turn off the flame. Beans are ready .keep it aside.

Prepare Rice


1 - Heat oil in a pan, add chopped garlic and chili once oil is medium hot.saute for few seconds (do not brown the garlic)then add onion and let it turn translucent.

2 - Next add cooked rice and keep the flame low.

3 - Season it with salt, Mexican seasoning , black pepper, and mix everything gently.

4 - Add boiled corn and lemon juice.mix for. a minute and turn off the flame.


Prepare Salsa


1 - Mix everything in a mixing bowl and the salsa is ready.


Prepare Guacamole 

1 - Peel the avocado and take out the pulp in a mixing bowl and mash it using a fork.

2 - Mix all other ingredients in mashed avocado and guacamole is ready.

Assembling 


1 - Take a tortilla, put 🍚 then beans followed by salsa and guacamole.

2 - Wrap The Burrito: Fold the short ends in, then fold one long side over the filling and gently push to ensure the fold is tight before rolling up the remainder of the burrito.

3 - Place this wrap on a hot pan if you wish and roast until golden brown or you can serve it is.

4 - You can make the burrito bowl as well.just keep all the elements in a bowl and some nachos and enjoy.




Tips


1 - Try using the small sticky rice for this recipe or if you do not have then you can definable go for the regular rice.

2 - Use the Mexican seasoning accordingly as it varies brand to brand, you can also use taco seasoning as well if you have some.
