Stir Fried Vegaetable Pasta

The quinoa fried rice is a healthy take on everyone's favorite Chinese takeout! it's easy to prepare and bit as delicious as the original.
These days I am experimenting with many more quinoa recipes and this one is the most beautiful and delicious one. Then I thought why should I not share it with you all. after all why to enjoy alone when I can surround more people and enjoy it together.
I adore fried rice and I am actually super picky about it. This version I can definitely say without hesitation is every bit delicious as the original one and I promise you won't miss the white rice.
Instead of using white rice, I swapped in heart-healthy quinoa, and let me tell you , I don't know which I like better now. This version is studded with tons of veggies.

1 cup quinoa
1/4 tbsp ginger, chopped
1/2 cup carrot, chopped
salt to taste
1 tbsp olive oil
1/2 cup chopped onion(if possible take green onion bulbs)
1 cup broccoli, blanched
1 cup mushroom, quarters
1/2 cup capsicum, chopped(red and green)
1/2 cup cabbage 🥬 chopped
1 tbsp soy sauce
2 tbsp red chili sauce
1 tbsp vinegar
1/4 tbsp black pepper powder
1 tbsp spring onion greens
1 - Rinse the quinoa with fresh water thoroughly.
2 - Set water in a pan for boiling and add the washed quinoa, add a little salt, cover and cook for 15 minutes. By now the water is completely absorbed by the quinoa. Transfer the cooked quinoa on a flat surface and cool down completely.
3 - Heat oil in wok or vessal on medium-high heat, add ginger, onion and saute them for a minute.
4 - Add the veggies and cook them on high flame for 2-3 minutes , add the sauces, salt, and pepper powder, mix well, and cook for 1 minute.
5 - Add the cooked quinoa to the sauteed veggies and mix well, cook for 1 minute on high flame. add the spring onion greens, mix well and saute for few seconds.
6 - Quinoa fried rice is ready to be served. serve hot.
1 - You can add other veggies of your choice. I have added my favorite ones.
