This is one of my favorite pasta salads. I love this so much. This pasta salad is so versatile that you can add whatever veggies you like. I would highly recommend this to try once. At least once a week, I have started eating salad for dinner. and keep trying different recipes and found this one super tasty so sharing it with you all. Hope you will like it too !! Crispy Palak Vadi



Palak Vadi is a Maharashtrian dish served as tea time snack or even as a side dish or starter too. Spinach is highly rich in iron content. Palak Vadi si the variation to kothimbir vadi.

It tastes just awesome and the good thing about this dish is that nobody will believe that it is made from palak. This recipe is perfect for kids as well to include palak in their diet.

Ingredients

1 cup chopped spinach

3/4 cup Gram Flour(besan)

1 tbsp carrom seeds

1 tbsp white sesame

1/2 tbsp turmeric powder

1 tbsp red chili powder

1/2 tbsp black pepper powder

salt as required

1/2 cup rice flour


For Tempering

2 tbsp oil

1 tbsp white sesame

1 tbsp mustard seeds

4-5 whole dried red chili


Instructions

1 - Take a mixing bowl and add in chopped spinach, besan, carrom seeds, sesame , turmeric powder, black pepper powder, red chili powder, rice flour, and salt. Mix everything together to make a dough. Add in little water if required.

2 - Cover this and rest for 10 minutes.

3 - Put the steamer on and grease a metal plate with oil.

4 - Divide palak dough and make a cylindrical shape. Keep it on a greased plate and it's ready to steam.



5 - Place the plate into steamer and steam for 20 minutes on medium flame.

6 - Open the lid after 20 minutes and let it cool down completely. Once cool down, cut into bite-size slices.

7 - Heat up a pan and add in oil, once hot add mustard seeds, whole dried red chili, and sesame seeds, pop them up and switch off the flame. Add sliced Vadi, mix it well turn on the heat and stir fry for 2-3 minutes on low heat or until getting crisp from both sides.



8 - Crispy palak Vadi is ready to serve. serve this as it is or with some spicy green chutney.
