Stir Fried Vegaetable Pasta

Namkeen seviya is a delicious breakfast dish.it is also known as jawe..This dish can also be served as a snack or light dinner. This is a healthy recipe as it has a lot of veggies.
To get bust of flavors in every bite, make this dish by following simple and easy steps given below. This is sometimes also called as semiya upma or vermicelli upma.
This recipe has many variations and differs with vegetables and spices added to it. The taste is derived mainly from onions and vegetables with a hint of lemon juice topped at the end of the recipe. I have made this recipe very simple with mild spices and its indeed delicious.
2 Cups Vermicelli
2 tbsp oil
1 tbsp chopped garlic
1 tbsp mustard seeds
6-7 curry leaves
1 green chili, chopped
1 1/2 cup chopped veggies(onion,carrot,capsicum,green peas)
salt to taste
1 teaspoon chili powder
Juice of 1 lemon
1 - Boil 5 cups of water in pan or vessel, add vermicelli once the water starts boiling.cook until 90% done. remove into a strainer and add 1 tbsp oil using your hands.
2 - Heat oil in a pan, add chopped garlic, green chili, mustard seeds once oil is piping hot.keep the flame high
3 - Add curry leaves once mustard seeds Splutter.
4 - Add veggies and saute for 1-2 minutes on high flame.
5 - Add salt and chili powder, mix well.
6 - Add boiled vermicelli and mix gently to avoid breaking it .cover for a minute and cook.
7 - Add lemon juice and mix.
8 - Serve hot with a cup of tea and enjoy it.
1 - Use boiled green peas.if using frozen then use as it is.
2 - Do not over boil the vermicelli else it will become like halwa.
3 - Add little oil in boiling water to avoid the stickiness.
