Stir Fried Vegaetable Pasta

Frankie is generally made and served as street food snack but can easily be served for, lunch and dinner too..it is quite popular with all the age groups but is hugely popular with the kids and can be ideal tiffin box recipe.
Kathi rolls and Frankie recipes are popular street food snacks across India .it is made generally with the combination of egg yolk with spiced meat stuffing wrapped in wrap bread. but for the nonmeat eaters, vegetarian rolls are made and paneer Frankie is one such popular alternatives among the veg Frankie recipe.
I would like to highlight some of the tips, suggestions, and variation for a crisp and flavourful paneer Frankie recipe .firsly you can make the same stuffing with any other vegetarian or meat alternatives .just replace it with paneer and the Frankie should equally taste good. secondly, if you are making these for tiffin or lunch box, ensure to wrap it tightly so that it doesn't turn soggy and lose its shape. as a matter of fact, it would be easier and cleaner with the store brought wrap roll.
2 tbsp oil
1 tbsp cumin seeds
3-4 medium-sized onion(chopped)
1 tbsp ginger garlic paste
2 tbsp red chili powder
1/4 tbsp turmeric powder
1 tbsp coriander powder
1 tbsp cumin powder
1 cup tomato puree
1/4tg cup curd
salt to taste
250 ml hot water
500 gm paneer(cubes)
1 tbs Kasuri methi
1 tbsp garam masala
1 tbsp fresh coriander
1 1/2 cups refined flour(maida)
salt,1/2 tbsp
water as required
1 tbsp oil
Butter
Half cooked roti
paneer bhuna filling
chopped onions
Frankie masala
chili vinegar
1 - Heat oil in a wok, add cumin seeds and allow it to splutter, add onion and cook until golden brown.
2 - add ginger garlic paste cook for 2-3 minutes.
3 - Add powdered spices and cook for 2-3 minutes.
4 - Add tomato puree, curd, and salt, stir continuously for 2-3 minutes .cook until oil separates.
5 - Adjust the gravy consistency by adding hot water, bring it to a boil.
6 - Add paneer cubes and cook for 4-5 minutes.
7 - Add kasuri methi,garam masala, and freshly chopped coriander leaves.
1 - In a mixing bowl add refined flour and salt, mix well. add water to knead a soft and stretchy dough.
2 - Incorporate the oil and knead the dough to get a more smooth texture.
3 - Apply oil to prevent the dough surface from drying
4 - Cover it with a damp cloth and rest it for 30 minutes
5 - Knead the dough once again and shape it into roundels.
6 - Flatten the dough balls for making chapatis.
7 - Half cook the chapati until brown spots appear.you can kee half-cooked chapatis according to your consumption
1 - Cook the half-cooked Frankie Rotis by applying butter on both sides before serving
2 - Apply the hot paneer bhuna filling on the cooked roti.
3 - Add some chopped onion and sprinkle some Frankie masala, chili vinegar, roll the roti and you are good to go.
1 - Instead of making fresh rotis, you can use readymade tortillas for this recipe it will reduce your effort. I have used readymade tortillas for this recipe but also explained the recipe for making Rotis.
2 - Please check the below notes for Frankie masala.
3 - To make chili vinegar, add finely chopped chilies into malt vinegar and mix it and use it for the recipe.
2 tbsp red chili powder
1 tbsp turmeric powder
1 tbsp coriander powder
1 tbsp black salt
1 tbsp anardana powder
3 tbsp mango powder
1 tbsp cumin powder
1 tbsp garam masala powder
Mix all the powdered spice well and your Frankie masala is ready to use, store them in an airtight container in fridge .use according to your consumption
