Stir Fried Vegaetable Pasta

One of the most popular breakfast recipes in India is poha ,it has a variety of recipes. I came up with such a unique version of poha , called puffed rice poha . generally, poha is prepared using flatted rice but here I curate a recipe of poha with puffed rice or so commonly known as murmura .
It is prepared with easy ingredients .this snack would definitely cater to your taste buds .you can pack this dish for your lunch boxes to savor its taste as quick in between work or even carry it as an en-route breakfast whenever running late for work. This poha recipe is sure to be. relished by children and adults alike.
This poha is not just delighted to your taste buds but also a powerhouse of nutrients for your health. This recipe of poha is abundant in protein, iron, and dietary fiber, which makes it a blessing for all the weight watchers. You can also give this recipe a try for your potluck, kitty party.

Puffed rice 2 cups
1 finely chopped tomato
1 finely chopped green chili
1/2 cup peanuts
salt to taste
1/2 tbsp turmeric powder
1/2 tbsp mustard seeds
1 pinch of asafoetida
1 lemon juice
5-6 curry leaves
1 tbsp oil
1tbsp fresh coriander leaves
1/2 inch chopped ginger
1 - Wash the puffed rice well and keep it aside.
2 - Heat oil in a pan and roast peanuts until it start crackling and keep aside.
3 - Add mustard seed in the same oil, once crackle, add asafoetida, mustard seed , green chili, ginger, and turmeric powder.
4 - Next goes in chopped onion, cook the onion until translucent.
5 - Next add chopped tomatoes and salt, cook the tomatoes until gets soften.
6 - Add soaked puffed rice and mix it well.
7 - Now add lemon juice and roasted peanuts .mix well
8 - Transfer into serving plate and garnish with coriander leaves.
9 - Serve hot with piping hot tea.
1 - Wash puffed rice right before preparing it . do not keep it soaked for a longer time else it will turn soggy and soft.
2 - You can also roast cashew nuts with peanuts if you like eating in poha
