Kids friendly breakfast or lunch recipe of palak roti rolls stuffed with paneer. I agree this takes some time to make palak roti first but the filling doesn't take much time and can be made in 10 minutes.
If you have kids who do not like to eat spinach in regular form like palak rice, palak dal, palak paneer, etc then this will be a good try. If making this recipe for school lunch box, clean the palak previous night and prepare the stuffing in advance .but make the puree and knead dough in the morning. but making the puree and kneading dough can also be done at night and refrigerated.

Ingredients
For Stuffing
1 cup paneer cubes(small pieces)
2 tbsp oil
1/3 tbsp cumin seeds
1/3 tbsp mustard seeds
pinch of asafoetida
1/2 tbsp ginger and garlic each(chopped)
1 chopped tomato
1/2 cup capsicum cubes
1/2 cup onion cubes
1/2 tbsp coriander powder
1/2 tbsp red chili powder
1/4 tbsp turmeric powder
1/2 tbsp roasted cumin powder
1/2 tbsp chaat masala
1/4 tbsp mango powder
1/4 tbsp garam masala
2 tbsp tomato ketchup
salt to taste
2 tbsp coriander leaves
For Palak Roti
1 1/2 cups wheat flour
2 cups spinach
1/2 tbsp ginger
2 cloves garlic
salt to taste
oil for roasting paratha
For Onion Salad
1 onion, finely sliced
2 tbsp mint leaves
1/2 tbsp chaat masala
1 tbsp lemon juice
Instructions
Prepare Stuffing
1 - Heat oil in a pan, add cumin seeds, mustard seeds, ginger, garlic,asafoetida. saute for 30-40 seconds and add in cubed onion, capsicum, and chopped tomatoes.cook until all the veggies get soft and crunchy.
2 - Add in all the powder spices and roast all the spices for a minute.
3 - Next goes in tomato ketchup and mix well.
4 - Add paneer cubes and toss is well to coat with the spices.
5 - Turn off the flame and add chopped coriander, mix it, and stuffing is done.keep it aside.
Prepare Roti
1 - Grind spinach, ginger, garlic into a fine smooth paste.
2 - Add spinach paste into wheat flour and knead soft dough.
3 - Roll a chapati out of it and roast well on medium to high flame. make all the chapatis like this.
Prepare Salad
1 - Put all the ingredients ina mixing bowl and mix well.
Assembling
1 - Put 2 tbsp of stuffing and 1 tbsp salad on one side of the roti and roll it gently. You can use a toothpick to hold the roll in shape.
2 - Cut into halves and serve hot.
Tips
1 - Above mentioned stuffing recipe is how I like to eat, you can customize or skip the spices of your choice. You can even use crumbled or grated paneer if you don't wish to use cubes.
2 - If using crumbled paneer, chop capsicum in small pieces.
3 - Do not skip tomatoes, it binds paneer and prevents drying
