This is one of my favorite pasta salads. I love this so much. This pasta salad is so versatile that you can add whatever veggies you like. I would highly recommend this to try once. At least once a week, I have started eating salad for dinner. and keep trying different recipes and found this one super tasty so sharing it with you all. Hope you will like it too !! COOK TIME:15MINUTES

Ingredients


For batter

1 cup semolina(sooji)
1/2 cup curd
1/2 cup water
salt to taste.

For Topping


1 onion finely chopped
1 tomato finely chopped
1 carrot finely chopped
1/2 capsicum finely chopped
2 tbsp finely chopped coriander leaves
8-10 curry leaves
1-inch ginger finely chopped
1 green chili finely chopped
1 teaspoon red chili powder
1/2 teaspoon black pepper powder
salt to taste

Instruction

  • firstly, in a large bowl take 1 cup Rava, ½ cup curd, and ¾ tsp salt.
  • mix well making sure the curd is combined well.
  • further, add ½ cup water and mix well adjusting consistency.
  • rest for 20 minutes or until the Rava absorbs well.
  • check the consistency if adding more water is required
  • now prepare the vegetable toppings, by taking 1 onion, ½ capsicum, 1 carrot, and 1 tomato.
  • also, add 2 tbsp coriander, 1-inch ginger, 1 chili, curry leaves, and salt.
  • mix well making sure everything is well combined.
  • now pour the Rava batter into small uttapam size.
  • top with a tbsp of prepared toppings and press gently.
  • pour 1 tsp oil around the uttapam.
  • cover and cook for a minute or until the base is cooked well.
  • flip over and cook both sides.
  • Enjoy with coconut chutney.
