Stir Fried Vegaetable Pasta

This is one of my favorite pasta salads. I love this so much. This pasta salad is so versatile that you can add whatever veggies you like. I would highly recommend this to try once. At least once a week, I have started eating salad for dinner. and keep trying different recipes and found this one super tasty so sharing it with you all. Hope you will like it too !! Quinoa Stuffed Pepper/Capsicum


Sweet bell peppers stuffed with a savory blend of quinoa,  herbs, and cheeses, each stuffed pepper is it's own tidy and complete healthy dinner package.
Every time I make stuffed peppers, I’m reminded of just how fantastic they are like their own mini recipe genre.
Some of you might have tried stuffed pepper with potato filling, but have you ever thought of filling quinoa. and believe me it super delicious.
While preparing I was even not sure that it will be my rotational dinner. It's super delicious yet healthy.

 COOK TIME:40 MINUTES
 TOTAL TIME: 50 MINUTES

Ingredients


2 round-shaped capsicum
1 small finely chopped onion
2 cloves garlic(minced)
1 green chili(minced)
1/2 cup chopped mushroom
1/2 cup chopped tomatoes
2 tbsp pizza sauce
2 1 tbsp tomato ketchup
1 tbsp oil
1 cup quinoa(soaked for 15 minutes)
1/2 spoon black pepper powder
1 spoon pizza seasoning or any mixed herbs
1 cup mozzarella cheese
salt to taste

Instructions


1 - Boil quinoa in 2 cups of water and keep aside.

2 - Heat oil in a pan, add onion and saute for a minute then add garlic and chili.

3 - Stir everything and cook for 2-3  minutes on medium flame then add mushroom.

4 - Next after a minute add tomato. then add pizza sauce, tomato ketchup, pepper powder, pizza seasoning, salt and mix it

5 - Next stir everything for 1 minute and add boiled quinoa.

6 - Mix everything well and keep it aside.

7 - Using a small knife cut around the top of the capsicum and remove the top, scoop out seeds. place capsicum in a baking tray.

8 - Fill half capsicum with the quinoa stuffing and then put some mozzarella cheese and again fill the stuffing then put some more cheese on top.

9 - Bake it at 180 degrees for 30-35 minutes(keep an eye on the oven if its nit burning).

10 - Remove from the baking tray(be careful as the tray will be very hot) and enjoy.



Note-

1 - Take Bottom flat capsicum to make it placed on the level.

2 - Oven may vary so be careful while baking. keep checking on intervals
