Stir Fried Vegaetable Pasta

This is one of my favorite pasta salads. I love this so much. This pasta salad is so versatile that you can add whatever veggies you like. I would highly recommend this to try once. At least once a week, I have started eating salad for dinner. and keep trying different recipes and found this one super tasty so sharing it with you all. Hope you will like it too !! It is a spicy yet irresistibly delicious snack prepared by deep-frying spicy paste coated paneer cubes. It has a dry texture and can be served as a starter, appetizer, snack, or accompaniment. Unlike paneer Manchurian, it does not use soya and chili sauce to get spiciness; instead, it uses varieties of Indian spices and a combination of cornflour, all-purpose flour, and curd to get its signature tongue tickling taste.

Ingredients


for paneer marinate

paneer 300 gm
red chili powder -1 tbsp
curry leaves 1 spring(chopped),
garlic 1 tbsp
ginger garlic paste 1 tbsp
corn flour -4 tbsp
maida 3 tbsp
lemon juice -1 tbsp
water to coat the paneer
oil to deep fry

for Tadka

oil- 2 tbsp
whole red chili -2
curry leaves -8-10
green chili 3-4 (finely chopped)
garlic 4 tbsp
capsicum 1/2 diced
onion 1/2 diced
red chili sauce -2 tbsp
salt to taste
black pepper -1/2 tbsp
spring onion - 2 tbsp
curd 100 gm
corn flour 1/2 tbsp
red food color (optional)

Instruction


1 -add paneer cubes into a mixing bowl.along with this add salt, red chili powder,  chopped curry leaves,2 tbsp of chopped garlic,1 tbsp of ginger garlic paste.

2 -next add cornflour and plain flour and rub ginger garlic paste into it .mix everything well. this step will ensure to get the crispy crust on paneer cubes. you must be getting really nice coating, now add lemon juice. this will increase the acidic taste of the recipe and makes it very delicious.

3 -next add little water to make a thick batter out of it.insure you get thick and even coating on paneer cubes.

4 -next deep fry these paneer pieces into the hot oil. once they are golden, take them out.frying paneer will take 3-4 minutes.

5 -for the tadka, take a wok or any pan, add oil.once oil is hot quickly add green chili, red chili, curry leaves, and 4 tbsp of garlic.along with this add diced onion and diced capsicum. give a nice mix and after that add salt and black pepper powder, spring onion green, give a mix.

6 -add cornflour and color into curd and mix very well and add this into tadka and quickly stir it constantly .once it starts bubbling, add paneer pieces. stir well for 1-2 minutes so paneer absorbs the flavors .now and turn off the flame.

7 -garnish with some coriander leaves and serve hot.

Tips 

1 - Instead of deep-frying the paneer, it can also be shallow fried to make it a bit healthier.
