Litti is usually roasted on hot charcoal or dried cow dung fire. This is the traditional method of roasting litti and the taste of littis made this way is very different. At home, an oven can be used to bake littis. If you have a charcoal-based open grill, then you can use it for roasting littis. You can even roast them on Tawa or fry them.
The Litti Can Be Cooked In Various Methods
- Baking in the oven: I have explained the baking method in this post.
- Roasting on Tawa: just flatten the littis and roast them on a hot Tawa on a low flame. Cook them till you see charred spots on them
- Deep frying in oil: you can shape the litti like kachoris and then deep fry them in oil. But do take care to seal them properly
- Grilling on tandoor: grill littis on tandoor till they are cooked and slightly charred

Ingredients
For Chokha
1 medium-sized Brinjal(eggplant)
2 medium tomatoes
1 small potato
1 small onion
2 green chili
4 tbsp mustard oil
3 cloves garlic
salt to taste
1 tbsp finely chopped coriander leaves
For Litti
2 cups whole wheat flour
1 cup sattu/roasted gram flour
2 finely chopped green chilies
1 spoon minced ginger
3 cloves garlic(minced)
1 tbsp carrom seeds(ajwain)
1 tbsp any pickle masala
2 tbsp mustard oil
1 spoon black salt
white salt(use carefully as we are adding black salt too)
2 tbsp lemon juice
1/2 cup finely chopped onion
2 tbsp coriander leaves(chopped)
let's prepare litti first
Preparing dough cover - take a mixing bowl to add wheat flour, a little salt, and 1 tbsp oil or ghee. now add water in parts and knead a soft dough and cover it and keep aside for resting.by the time our dough is resting we will prepare stuffing for it.
preparing stuffing for litti -
1 - Take sattu in a mixing bowl
2- Add onion, green chili, ginger, garlic, carom seeds, salt(black and white), pickle masala, coriander leaves, lemon juice.mix everything well
3 - Next add mustard oil, mix very well and sprinkle 1-2 tbsp water all over and mix the flour with water evenly. Do add more water if required. The stuffing should not be too dry or too wet.
Stuffing and making litti
1- After 30 minutes make small or medium-sized balls from the dough.
2 - Sprinkle little flour and roll each ball into a circle of about 5-6 inches.
3 - Place 2-3 tbsp of the stuffing in the center.
4 - Pleat and then join the edges.
5 - Press the joined parts and lightly roll the stuffed dough balls into your palm to give it a round shape.
6 - Prepare all littis this way
Baking litti
1-Do place all the littis on oil greased baking tray.
2 - Place the littis in a preheated oven at 180 degrees Celcius. preheat oven at 180 for 15 minutes.
3 - After 15 minutes of baking, remove the tray and flip all the litties and place the tray back in the oven.
4 - Again after 15 minutes repeat the above process. you might have to do this once or twice for even baking.
5 - Bake till the crust looks done with some light brown or golden spots on them. Timing will vary upon the size and liters of the oven.it took me 40 minutes for me.
6 - While litti is baking , let's prepare chokha till then
preparing chokha
1 - Roast brinjal, tomato over a gas flame until it turns into black color and becomes very soft. or you can roast on a charcoal-based open grill. alongside boil potato
2 - In a big bowl take water and dip roasted brinjal and tomato into it to let it cool little
3 - Peel them off and keep in a bowl
4 - Using your hands' mash potato, tomato, and brinjal
5 - Next add onion followed by all the other ingredients and your chokha is ready
6 - Brush baked littis with melted ghee all over and serve with chokha
7 - This step is optional- and only to get charred(black)spots on it.secure the litti in a pair of tongs and place it on fire.rotate for few seconds until you see some charred spots on litti.
8 - Serve this litti with chokha and share your reviews with us.
