there are several variants to kulfi like malai, rose, mango, and strawberry. but, today I would be sharing Kesar Pista and pista badam kulfi recipe.

Ingredients
500 ml of milk
1 cup fresh cream(optional)
sugar to taste
2 tbsp chopped pistachio
1 tbsp almond
5-6 threads of saffron
1 teaspoon cardamom powder
Instructions
1-boil the milk in a pan and once it starts boiling, add fresh cream.
2-cook while stirring continuously until it thick and soft peaks form.
3-add sugar, mix it well and now turn off the flame and add cardamom powder into it and stir well.
4-Kesar Pista kulfi..divide it into two equal parts
a)take 2 tbsp of milk in a small bowl and add saffron into it , mix well until you get nice yellow color.
b)add this saffron milk into one part of the separated milk followed by chopped pistachio.
c)transfer it into kulfi mold or in a disposable glass and keep it into the deep freezer for 8 hours.
5-pista badam kulfi...
a)dry roast the almond until you get cracks on it,don't let it burn so be careful. let it cool and chop into small pieces
b)add chopped almond and pistachio into another part of milk and mix well.
c)transfer it into kulfi mould or disposable glass and keep it into a deep freezer for 8 hours.
6- remove both the kulfis from the freezer and unmould carefully by pricking thick kulfi stick into the mould.
Note.
recipe of kesar pista and pista badam are same .the ingredients on,y makes them different.
2- in this recipe, I have used disposable glasses, you can use whatever you have.
